Guys I'm told that I should remove a membrane from the back of the ribs. My butcher tells me there is no such thing, and he is a pretty fancy Italian butcher (Scarfo's). What gives? Damo

There is definitely a membrane on the inside surface of pork ribs - it is called the parietal.

Does anyone have an easy recipe for cooking ribs in the oven? I bought a slab yesterday (at deep discount ) and need a way to cook them so they'll be flavorful and tender. My son is in induction and doesn't want to use a sugary sauce so a rub might help...
