Hi
I am interested in any experiences using these products. The fiber content is high in the coconut flour and the carb counts are low in all three.

It's been a lifesaver for my Type 1....
I do a ton of baking/cooking with Almond flour and coconut flour.
Almond cookies, walnut cake made to help with rising.
I learned to use almond flour from our member, Gerri.

One recipe site I love (Elana's Pantry) stressed that very fine blanched flour easier.
The skins on! I was told that with the skins, it would make almond meal , whereas with skins off would make flour.

Unfortunately none of these things are available in New Zealand, and so far I haven't found any websites that will ship here or isn't prohibitively expensive to ship.
I would love to try coconut flour.

Almond flour by RED MEAL ( think they call ...use the puld setting on food processor and it becomes as fine as flour for me plus I was told.

So after the umpteenth time I've attempted this, I think I went thru $100 worth of Almond Flour, I got a recipe that works. So far I have made a focaccia cheese bread to go with a pot of Chicken Soup, it turned out wonderful. My Grandkids devoured it....

When its weighted down the yeast is unable to make it rise than sugar .

I just had the BEST pizza crust yet (of the ones that I've tried). It's got a crusty biscuit texture with plenty of flavor. My picky eater went back for thirds.
