I'd like to know if there is a way to CC any text or status changes from Apple on iTunes Connect, i.e. any changes about your app's review procedure, to a specific e-mail address ...

Just use NSURLConnection.
To do is not halt the execution of your code (Apple won't be happy about it) but rather alert remove the "wait" view and go about with dealing with the response you got.
