What do you use for sharpening and why?

Depends on what you want to sharpen and how much. I usually use either a High Pass filter or Smart Sharpen. Just toy around with them for a while and see what works best for you. source

Anyone know of a good place to sharpen reed knifes?

How to water ski is one thing of two things I will never be able to master. Sharpening a knifes using whet stone is the other. In both cases many have tried to teach me and all have failed with more then one good pocket knife being destroyed in the process. I found my last guy at a fabric store where he sharpened once a month. There are no fabric stores about but there are some old school barbers. source

A single pass of the Photoshop Smart Sharpen filter is all you need to use. If that doesn't get the job done, you're pretty much up the creek. There are plenty of scripts out there that have lots of steps, heavy CPU usage, and claim to do it better. They're basically the photo editing equivalent of snake oil. source

Sharpening Steel technique - Why stroke toward yourself?

How come all the chefs and instructions have you stroke the blade over a sharpening steel with the edge toward yourself? You could achieve the same angles with more safety stroking away. Is there something to the shape of the grooves, or what? source
