is i.val() fast enough to use it multiple times or should you do:

It is slower than the native DOM .value call as you incur the additional overhead of an extra function call as well what goes on inside the function - see function definition of val... .
You aren't going to take a performance hit from calling jQuery's val .

Typically, our page times are in the 150ms; but there is not an ORM out there... .
For instance, I never noticed a problem, I'm talking about when the client has DSL or better.
As a thought, even fast pages/apps feel better when faster.
