I will say that with brining, the leftover meat is always still pretty moist.
You might be able to get away with that if you brine, I have never tried it.

I would think that pure a brine would freeze.
brining increases contents of cells because water would "leave" the cells to "dilute" the brine.

I just ordered 3 for myself. I've made brine shrimp hatcheries for years by siliconing a bit of tubing in place on the bottom. after a while they leak, or get all gunked...

I go back and forth on this one. On the one hand brining the
