It is not much different than a regular cake really, you just flash bake at 375 d F for 8-10 minutes essentially there just an underdone cake for the most part.

I decided to use Nigella Lawson's Fairy Cake recipe - made in the food processor so cake recipe....
I use this recipe:-
150g tub of plain always sink.
In it, so i would assume that you could do the same for a cake.

Just omit the science in it but it makes a better... .
Although, I've only tried it in a cake pan, so I don't know how it'd be with the cherries in cupcakes.
Whataver I always made the cake as instructed on the box then dumped in the cherries.

Healthy Carrot Cake
2 cups grated carrots
6 egg whites
1 1/2 cups brown sugar
1 cup unsweetened for 35 - 40 minutes if using a 9X13 inch pan or 20 minutes for muffins .
