Always wondered how the home canning thing worked...seen it done, just never paid ateention to the process...thanks It's also a good idea to have your canning equipment inspected annually.

I just started water bath canning, I have done spicey pickled vegitables so far and turned out great, next I am going to do salsa.
I would like to get a pressure canner and go for that.
So what do you can and what are some of the recipes you have.

WHEW! Success is making a successful split, then not having to hold your breath to see it turned out right.

I usually try to do a few peaches may have gotten the peaches here in the state as well! That happened last year, and I had the berries of a time (no pun intended) finding peaches....
Have a freezer, so I'm limited to what I can put up .

If you'll put 'canning peppers' ....
You either need to use vinegar mine raw into the jars when pickling peppers, if this is what
you mean when you say 'canning'.
I read up on this and concluded that canning peppers wasn't
for me.

Vanilla Bean Peach Jam
5 1/2 c sugar
1 ea vanilla beans -- cut lengthwise
2 1/2 lb peaches....
I have a Vanilla Bean Peach Jam recipe (and a hot pepper jelly recipe), I don't see why you couldn't use it and just add chopped jalapenos .
