Repost of a good overview on understanding the basics of home food canning. I grew up doing pears, peaches, dill pickels, tomatoes, and apple sauce (with cinamon) every fall - and if you try just a little, you can make it fun for kids to help.

To all you gardners, wondering how early one can plant potatoes, and what varieties do well. Also how many days do you think it will take, to produce a decent enough size for a fesh meal.

Should be eating fresh potatoes by mid August berry patch is 12'X25' and the little garden for tomatoes is 25'X20' so we do a lot of canning this year.
Putting mine in tomorrow.
With a few hills of Yukon gold.

I got stuck on canning tomatoes, green beans, jams, broth and the like and it hadn't occurred to me that I can put up stew, chili and non cream soups too. Duh. What do you can besides the typical garden fare??

Canning & Preserving Just changing the title and info I'm requesting. Does anyone here practice canning and preserving? I'm reading up on it and looks to be a great alternative to buying your food pre-canned as to eliminate preservatives and what not....
