Always wondered how the home canning thing worked...seen it done, just never paid ateention to the process...thanks It's also a good idea to have your canning equipment inspected annually.

I have messed around a little bit with lacto fermentation, (salsas, jalapenos, hot sauces) and found that there really isn't a whole lot of info out there .

Good luck sorting the seeds.
Each has a colored label, marketing what the seed is and has the date the seed was placed in the bottle .

Myself.
In fall, my mother does tons of canning, and they rarely have to buy veggies from the store.
And don't forget the herbs.
Beans, turnips, spinach, zucchini/summer squash, and pumpkin to name a few.
