Cilantro and Siracha go so well together! I'd probably go with a white cheese, like Jack.
I don't know, but the burgers sure sound good! I would throw some cilantro on the burgers with lettuce.

And hate Blue.
For those of you not sure about Gorgonzola, it's what I call a "green" vein cheese as opposed to blue like bleu cheese.
