Do senior citizen remember when Chinese food used to come with pea pods in some dishes? Or is it just out here in the western states that have been leaving them out? I ate at Chinese restaurant yesterday and the dish had some bean sprouts, hard noodles...

Pea pods but you have to order them (and probably if you knew how to speak chinese you could get a whole lot better food then those of us restricted to basic English).

Chinese citizens can transit/stay in Hong Kong for 7 days without an entry permit if they have the return fight tickets. If they wish to stay over seven days, they must apply for Entry Permit at the Chinese Embassy or Consulates in U.K.

You might try to find a visa service which specializes in Chinese visas purchasing the tickets, others have used agencies....
A double entry Chinese visa isn't a sure thing especially if you need to show your transport and proof of accommodations.
