I know that the Core i7's are Quad Core and Hyper-threaded (so 4 cores, and 8 logical), and the Core i5's are Quad Core as well but not Hyper-threaded, does this really make a difference? Or are the only people who are going...

If you look at the reviews like this one on Tom's Hardware you'll see that the Core i5 is not a bottom feeder.

No point in upgrading you have a good clocking Sandy Bridge CPU... .
Only so much juice out of a lemon.

I was thinking of getting a core i5, because its a lot cheaper than the i7 range, and I've been told it can overclock very nicely.
Now I don't intend to push the overclocking to the very extreme but it would be nice to get an extra 0.5 GHz out of it. ...

I3, i5 and i7 have been cpu with just only 2 core while i5 or i7 are 4core with best performance.
core i3 and core i5 are the processors launched by Intel in late 2010.
