On my Windows 7 machine if I i go to Default Programs, all the media files are associated to Windows Media Player and the association check-boxes are grayed-out. How can I fix this?

To change the default to another application, you select that application and select a default program by associating....
The checkboxes are disables because you cannot unassociate Windows Media Player or any other application really.

I'm trying to convert some video files on Linux which can be played on what I assume is a default installation of Windows XP. I don't have access to the machine they will be played on, and the user who will play them doesn't have admin rights to install...

I would probably suggest one of the following:
WMV Microsoft MPEG-4 (AKA VC1) MJPEG if u can't install a player or codecs u can use MPlayer (just to that extension).
With Windows Media Player 9 & 10, the default for XP.

For my day to day i use deadbeef, because-player which is transparent to me
(less friendly: the only one i am capable to use without headaches it already comes with more then enough....
Really need in an audio player that it doesn't already do.
