If it this is just more Demon's Souls, it's not a Demon's Souls....
But hey, I'd love to be wrong.
Even if this is related to Demon's Souls in any official capacity, I think Sony would just muck is the logical conclusion.

Monk's Head Wrap Demons Souls? How will it be available if the servers shut down at the end of May? Will they make it a permanent reward for deferring the boss? Its the only item in the game obtainable online only.

I doubt that they plan to patch the game at this point, so I'd assume it will just not be available any longer. .
