I have been thinking about trying to make this for a while now. I basically used a recipe from Alton Brown of Good Eats TV show, but used straight venison. http://www.food.com/recipe/alton-bro...-recipe-344915 I have trouble sticking to an exact recipe...

It smelled more like sawdust, and there are many times where he either won't eat, or won't eat without mixing it with a little wet food of the Wild Venison....
Priced grain based stufff he almost didn't care enough about it to eat it.

Was it properly stored? Did you just defrost it? venison and elk are a darker meat so only way to tell is to open it and smell it if it smells good eat it if it smells bad toss it.
Color is irrelevant.
