1 eggplant- 1 to 2lbs
Olive oil
2 to 3 eggs
1 can bread crumbs
speghetti sauce- 16oz jar
Wash and peel eggplant. Then slice into 1/4in slices.
put some olive oil on bottom of large frying pan. Beat eggs in large bowl.
Take one slice of eggplant at a time...

I peel it and make 1/4" thick lengthwise slices (I find they fit in the pan better), dip in 1 egg beaten with 3 whites and a little not a fan of cooking spray) and then spray....
It's healthier and faster.
When I make Eggplant Parm, I bake them.
