Simply output UT elements as they are and process any text in between... .
To me this seems like an easy use of XSLT .
Let me know if my assumption is wrong, but from your example it seems you want to change text that is in {} and not in a <ut> element .

You have to CCA IND, enclose a £1 postal order, send via to the original creditor, enclose a £10 postal order and this can take up to 40 calender days.
They will try and get a CCJ against you.
