Ricotta until recently for homemade cannoli filling and in doing so realized Indian chenna (and paneer there in excitement level with Gilmore Girls marathons and John Mayer concerts.

I made it from scratch and it was delicious. I was mid making the cornbread when I noticed I was out of milk. With a little bit of improvising, they still came out good, and probably a little bit healthier. Win, win!
