If the Mail-Client > Mail > GMail go to Advanced and assign deleted items to the according IMAP-folder in GMail.
In GMail Mails are only labelled "deleted" (and not moved to some trash).

Yes you can use Outlook with Gmail invites or get the same offline functionality.

Those can contribute to the overall storage that might be reflected in your Gmail Account assuming using gmail since the early closed/invite only beta.
