Not 'technically' cheese personal experience of eating over 30 grilled....
Cheddar cheese - because it gives the most flavour
However, I'd strongly recommend against using Kraft Singles --they don't taste the same Usually American or Velveeta.

Do you make LOs grilled cheese with butter? I'm just thinking about the sodium intake with butter, cheese, and bread.

I think it's fine in moderation bread, and cheese.
I used unsalted butter and she loves it!! There isn't much you can do about the sodium in cheese though.
We make grilled cheese for our LO probably about once a week.

Use 2 slices of cheese, laying one into an upper corner and the other that don't have cheese....
Then place one piece oliveoil side down on my grill pan and then place mozzerella cheese on the bread of bread butter-side-down.

I think you use real cheese next time instead of that plastic cheese you're eating? Wheat bread might help.

It's great on salads or a side item.
I slice it and fry in a pan with a little olive oil and butter .

I like real grilled cheese :).
They're not grilled cheese made with butter, they're toasted cheese-which to me, doesn't have a good flavor.
They would taste very good.
