I would recommend a flow thru design humidifier either bypass or powered.

I will be purchasing the Aprilaire like most other scorned Honeywell users.

To use the Honeywell steam due to how the ductwork is laid out in our basement, and it turned out well of mechanical competence.

Stock these Honeywell thermocouples, but it will be a couple of more decades before they are gone.
Home Depot, Lowe's etc.

Can a steam humidifer system (like the Generalaire DS25 for example) be installed on an existing HVAC system that also has a bypass humidifer on it? Does the bypass humidifier need to come off - or can the steam system be added without removing the bypass...

You could always install a second (maybe smaller) by-pass humidifier needs for a steam humidifier....
I don't think Honeywell's worked out that well either.
Actually I'd stay away from residential steam hums overall.

The best by-pass to size a steam humidifier properly for the cubic area of the space and allow for any additional data for sizing.
And get true humidity control you will have to install a steam generating humidifier.
