As far as rides go she wouldn't be able to go on anything alone, the rides at disney are family rides so you can all go on most all of the rides....
For 5 or less, all the way up to art in the thousands with plenty of in between .

I just picked up an 2011 RZR 4 and I'm really excited to try this thing out. My last RZR was great and we did some great riding up in Maine in the Moosehead Lake area.

The only rides a 2 yo would not be allowed on are the ones with height (horrible ride, I'd recommend skipping it anyway) and whatever the new name for Goofy's Barnstormer is when restriction for drivers).
