A few times I have had my pie crust weld itself to the pan after baking. This is usually with a crust that is filled and then baked, not pre-baked. Does anyone know what causes this to happen? It is not a matter of the filling leaking through the crust...

Pie crust dough, when rolled, should be pliable like fabric and down between the crust and pie plate.

To make Shepard's pie, is that just simply using mash potatoes as the crust to a pot pie? Does that lower the calories too?

That is how I think of it too...pot pie topped with potatoes instead of the crust contains quite a bit more calories than a serving of pie crust.

You're/misunderstand the....
I use a squishing technique just like ktexp2.
1/3 cup plus 1 tablespoon are tiny, you're not going to get a flaky crust.
Single crust pie (just double for a two crust recipe.

My rhubarb is growing like mad this year and I have held off on making a

Melt butter in 8" baking pan.
Beat eggs well, Add flour, milk, garlic and baking powder.
Pour into baking pan
Stir in cheese and spinach
