When I boot up, I see a message that states "Detecting Hard Drives...". If I then wait, the screen clears and I see another message that states (I think) that there is no array for the NVIDIA Raid BIOS and the system hangs after that.
I can only assume...

See a Nvidia entry for RAID and disable it.Have you enabled RAID in the Bios? if so you need to disable it.

Performance will probably be equivalent between your soft and hard solutions .
I think that software RAID will be easier to recover than the one data in the soft raid volume.
What if your MotherBoard die?.

I have one and my friend has another one he said I could have...how much of a performance increase should I expect combining them? Would I just be better off buying a newer one?

To answer your question, yes, I would recommend getting a new card .
And if you have the slot for it, is there really a question? Isn't it called SLI for Nvidia cards? It's SLi for nVidia cards.

You seem concerned about loss of data quite a bit, yet you're copying it all to a RAID 0? ....
You do not need to do anything with the nVidia raid software a massive RAID 0 and off you go.
You will need a backup.
On the disks.

Sometimes even switching between to not be recognised.
Plan that the new controller will recognise a RAID array setup by the old.
It's 99% likely that the new RAID controller will not recognize your current setup.

I'd say go for Raid5 over 7 disks, and keep one as HS.

Lost data, but it does mean that your RAID has failed and it is the features of the RAID (like of your problem Data Recovery for RAID , which says:
