But are different wild characters allowed to occur consecutively? Like, mail.$me@server.com .

You really don't want to create one, either use regex validators for form entry purposes .
They are not pretty, in fact they are pretty awful, spanning hundreds of characters.
There are a few RFC compliant email validation regexes.

Is there any bash command to do something similar to:
if [[ $string =~ $pattern ]]
but that it works with simple wild cards (?,*) and not complex regular expressions ??
