From a compressive strength stand-point or dump....
For a patio, 3000 psi concrete should be adequate.

Around here all driveways 4" or so thick (sometimes 6", but no "footings") are over 4000 psi and air entrained....

Of course air entrainment is not common in FL and the cost to the money involved by increasing... .
That is why 4000 psi in very common or normal.

You really should not use either concrete or mortar for a good job either concrete or mortar for a good job even though people can get away with it in the short term engineers limit the maximum strength....

That doesn't help going in but you could accompany the inspector on the inspection and see if he/she thinks... .
Strength (in PSI after concrete? Mine did.

They will be tender for a week or so, the 3500 psi....
The plastic will keep them damp, the concrete itself will cure fine.
My posts understanding....
Never let curing concrete dry, keep it damp for at least a week, preferrably a month.

The moxie triples the flexural strength and doubles the psi.
