Is it possible to "upmix" (split) stereo output from games, winamp, youtube and so on through 5.1 speaker set? Movies from DVD or some games uses all 6 speakers, but most of today's usage does not. I know foobar2000 can upmix stereo MP3 to all speakers...

Yes it's possible Control Panel app lists two faux surround... .
If you are wiring your audio output to external equipment through a stereo path, you will be limited to that.
If your hardware has a 5.1 output path, the upmix will be supported.
I can't figure it out and I have looked all over the web. I have an mkv files I try to remux and they are 5.1. Whenever I remux, I get stereo sound. Changing settings doesn't help either. Any help would be greatly appreciated!

Keep in mind that 5.1 sound is only available on a DVD, blu.
To have 5.1 surround sound it has to be an optical audio input or the HDMI cable.
The Red and White RCA jacks are for stereo inputs only.

If you are looking to get some 5.1 headphones, they will not use the same 3/4 in headphone jack your microphone and regular....
You can use regular stereo headphones with your 5.1 sound card, you will however, only get 2 channels of sound.
Is there a reasonable way to use something like a stereo reverb plugin in a 5.1 session? It's not something I have any need to do, and I look forward to the cognoscenti sucking their teeth and flaming me for even considering it but ... Whilst my gut says...

I'm trying to think of nice ways to use a sub both for 5.1 movies.
What about making a switch box to select from the 5.1 sub out of the computer, and high, level inputs.
And for stereo music augmentation.

Since you'll be connecting to amplifiers, why not use stereo out internally on the line out jack (green) and use 2 stereo "Y" adapter cables ....
The 3 jacks on the back panel the way you want (left + right stereo out on each jack).

I've found a few KVMs that support audio. But at best they support stereo. Are there any KVMs on the market that support 5.1 audio?

Would just be a extra box + one extra power cable) go to a audio specialist and get a 5.1 mixer output (I honestly don't remember what it's called, but can transfer 5.1 over a single RCA cable.
