Okj dumb question #3. when i watch the pro swiss carvers i am struck with the idea they have lots of gouges, all very sharp. I cant fathom the idea this guy comes to work everyday and spends a hour or two stropping all those gouges. If he is a professional...

I can touch up all.
My guess would be a buffing wheel or system I'm guessing a power strop also! I use a home-made version of a Burke sharpener and it takes about 15 seconds to strop a knife or gouge.

Laying the loose leather strop on top of my Butz.
My Butz strop is suede and well loaded with White Gold and I also use another and finish on the smooth side which is just oiled.

A good barber hone, like a swaty or an anchor or 1 of many brands made back with chromium oxide on balsa....
When the razor needs a touch up, do a few light strokes strop and if everything strop is essential.

Could you have before I hone a razor I always draw the edge across a glass lightly, I think that would knock off, but what it is, I do not know.
I have over honed, a few strop type strokes fixed it and I was able to move up.

Just give it a wipe down with your palm before you strop and it should....
If your hanging strop is two-sided, you could use one for the paste, the other for the leatherI wouldn't use any paste on your every day strop.
