If you wet your knife before each slice, the nori tends to slice easier, rice sticks to the knife less and you get rounder rolls.

IMO, sushi from a reputable place is ok.

FYI...when you make inside out rolls, wet the rice-wise it was as good as any california roll I have had at any cheap sushi place, and was actuallyi gotta not use f1.8 for these photos....
