The book here is Introduction to Automata Theory, Languages and Computation by Hopcroft, Motwani....
It's used for the CMU course.
I recommend this book.

Probability theory through Ross and want to learn more, Grimmett is a good second book.
But that will be the case with almost any statistics book.
