I've tried TVersity, but it's interface is a little clunky (being in Flash) and WMP seems like overkill.
Is there something smaller which gets the job done?

I edit my tags, copy my files into the right folder, and just wait for TVersity to update.
I use TVersity and I hardly ever need to use the interface.
I have to admit you have the best option so far .

Tversity not recognizing on either 360 now, and PlayonIf PlayOn is also failing, disconnect the 360 and attach it where the working one is.

Streaming works as well as before..
That will show if it's a TVersity-specific problem the 360 sees tversity instantly.
At installing PlayOn and see if that works.

Spoke a bit too soon; playon will stream these files, but they are choppy - like every couple of seconds.
that's odd, because the machine i'm streaming them from is way more powerful than my media server, but it was streaming HD (1080 even) Top Gear flawlessly...

When I attempt to play an album on my PS3 using TVersity streaming it will play one track and then stop. The files are being transcoded from the FLAC format.
The only change I have made to my system that might affect this problem was an upgrade to MediaMonkey...
