Try switching off desktop effects.
Free and is IMHO a much better product.
Do you have to use VPC? I've had GREAT success with Sun Virtualbox .
I had similar problems using anything other than windows with VPC2007 .

You'll need to download a small VMX (see EasyVMX have much like with Virtual PC, to be honest.
Those versions of Ubuntu (and 8.1) fine.

Virtual PC doesn't support 24bit colours, you must manually set X to use 16 or 32bit colours.
