IMHO, after playing around.
With it, I think you should just create 2 virtual servers one for IIS and the other for SQL Server-deployment-on-windows-server I think reading through that will help you.

But for most servers, I'd workstation or virtual server 2005...

Unless you are running windows server 2008 datacenter, you have to license the os for each running instead of one....
Can you not have, say, 3 servers, and use IIS of these web sites.
