Consider a 2kg scale with 1 gram readout needs a resolution of 2000.
This is 1 part in 1024.
However the usual MCU analogue input is only 10 bits resolution, insufficient for a weigh scale usually.

In this case the project very likely needs more resolution than the 10 bit ADC analogue input can provide .
The output of the load cell could be an analogue voltage or current .

I use EI's teaspoon dosing, and do not worry about weighing the tiny amounts.
