Is there an online book, like the palmer equivalent? My wife wants me to make a riesling, something similar to snoqualmie or hogue late harvest. Should you use a kit or is there an AG equivalent to wine making as well?

This is just a long shot idea that would take some serious work(sheep herding), planning, and cash, but I figure I would present it any way.

When making homemade wine and specifically kits, the clearing of the wine often uses Kieselol followed by Chitosan. One of these adds a flavour to the wine that I absolutely find revolting. What could I use instead?
I have made quite a bit of wine this...

It does lookThe home winemakers I know either use isinglass or don't bother, depending on the wine.
Isinglass is also a fish byproduct, so I might be hesitant with it .
