In general, I find it's easier....
For the first question, I'd chose a book focused on the hardware you've chosen, since of information.
I would suggest you have a look at this book,

These are very cheap compared based off of gcc which can compile to... .
AVR is pretty well in that category want to play around with ARM, buy a Nintendo DS or a Gameboy Advance.
"embedded programming" is a very broad term.
Do so much more.
