Luckily, your career change is not so drastic so aspect: making that change will require a lot of reading and programming and maybe some time in school trying to figure out and design....

For real embedded you need 'C', an ability to work with crappy toolchains without too much frustration, being able to program without relying on sophisticated debuggers and a knowledge ... .
What kind of embedded ? If you just mean iPhone then it's simple .
