I just grabbed some kexts from new 10.5.2 from new macs (some kexts have been updated) and noticed the new AHCI kext gave me support for all my ICH9 ports in AHCI (I flashed my P5K with P5KR bios to have AHCI...) so if you don't...

I've noticed in the BIOS settings of the newer PCs I own that I can configure the drive controller work either in AHCI (Advanced Host Controller Interface) mode, or else in IDE mode.
I'm suspecting that AHCI "performs" better, but I really don't know ...

First off, are you certain AHCI has been from IDE to AHCI will mean you need to change the driver from the IDE driver to the AHCI one (called 'ahci')

Yes
You will need to install the proper chipset drivers....
Changing the mode after installation more often than not results in an unbootable install (with BSODs) .
If you're planning on doing this anyways, then yes, you need to do so before installing Windows .

I would not think it is possible to switch between them without doing a sysprep generalise, or reinstall windows .
I am not sure you can boot from both as hard drive chipset / logic chip is one of the unique features between installations of Windows .

Is there any noticable real world difference between the two different mode?
the laptop comes default on AHCI mode but when I try to install WinXP it won't see the HD till I set it to ATA.
not sure if it will see AHCI again if I switch it after it finish...

I was trying to setup a friends laptop to dual boot vista/xp like mine. However after some searching, I found that his BIOS has his SATA setup to use AHCI mode. If I change that back to legacy or normal, which ever it was, Vista will BSOD on us. My question...
