Imo, South America is more diverse and more interesting compared to SEA tours, treks, travel....
English picking up new word and phrases.
The main challenge will be the language.
South America will be the same, more or less.

I have worked here for almost two the travel field here....
Travel is easy from Quito via busses, there are inexpensive trips availible to the galapagos though volunteering/travel trips, and it´s easy to meet other travellers.

Mexico is fine in July,but you may well have weather problems in Central America....
You trekking etc.in the south will be impossible.
But you might skip Mexico, or all of Central America, or even much of Patagonia on the way south.
