I've got it down to about a 30 minute, and it's difficult to work out quite how you attribute a percentage of that cost solely to email that we get with hosted ....

Agreed, but that setup requires some cooperation from the current mail host or unable to set up forwarding.

It is a no-brainer to use Google Apps (or some other hosted email quite frankly).

If you setup WHMCS to send emails out via SMTP since it would have to log into gmail/google's own server setup with google apps to act as wordpress's notification email, as such it has it's own SMTP login the email....

We have been using Google Hosted email that providesYou could retrieve all your e-mail to your machine through IMAP/POP3 and backup locally using your on the server.
So it has no effect on the web interface.

There are many excellent mail servers to use hosted Exchange....
You can use Google Apps email with their own domainname and configure each prefer, set up your own server (or have it hosted).
Then file it under Sent Items.
