I have been asked to bake some vegan muffins and was wondering whether I can just use my normal blueberry muffin recipe. The recipe calls for 1 1/4 c oil, which seems like an awful lot. But, I always follow baking recipes... follow Colleen's instructions that say to lick the bowl clean while the muffins are baking.
