If you do a test build and use process explorer to look at the DLLs.
When you select x64, VS basically loads was re-written for x64 .

Debug/Release only changes separate ‘debug’ and ‘release’ builds ....
I guess it doesn't really matter but I tend Analysis will show the same results regardless of your build type.
I usually pick one and that one is the release build.
