3 cups of small egg noodle, you know, the wavy ones!

My neighbor is going though some surgery later this month and I would like to make her a couple of casseroles or meals that are easy to reheat.
I asked about her diet restrictions and she told me needs food that low acid, also no tomatoes and onions.

What casseroles.
I'd probably do a white sauce over noodles + protein or make veggies au gratin .

That casserole looks good. I have not tried a lot of veggie casseroles. I want to try some though.

Hi all!
I've really gotten into cooking since joining weight watchers. However, sometimes I'm too tired to cook when I get home.
Just wondering if anyone has any good ww-friendly make-ahead recipes or casseroles that they enjoy?
Thanks in advance! :)
