The two on the ends are Wyeast and the center is the Chimay culture. The Wyeast have now pulled ahead of the Chimay this morning but the Chimay is going strong.

What do people do when visiting Chimay for the Bug-In, going to 1st European and Hot Rod event in june, not sure weather to camp or stay in a hotel, any recomendations appreciated

Chimay is a small town & as far as I know only has 1.

I know there are a bazillion threads on harvesting Chimay yeast. But has anyone actually been successful lately (past year) with harvesting from the 12 oz bottles?
I tried from a few bottles and it doesn't seem like it worked. Pitched 2 bottles worth ...

Nope, but I'd like to hear if it's possible.
I harvested from a big bottle of Chimay blue was very dark in appearance but worked just fine.

Down to 1.020 now at 1.5 weeks. 11.94%. What should I do about bottle carbing at 12%? Does the WLP500 stand the high abv?
On tasting it's bubblegum, solvent, fruity. I don't think I'll be able to drink one until xmas 2012 or later.

You'll likely want to tweak the recipe after the conversion anyways .
Id recommend using BeerSmith or a similar piece of software to do the conversion .
