It's good in soups and stews, you! That's probably the most versatile... .
You do have to cook it and/or add some sort of sauce to it, as it can taste a bit yuck plain -- say, like 1/2 an inch cubes -- and add it to what you're cooking.

Cut the skin around the breast, be careful to cut a larger piece of skin than the breast as it will shrink when cooked. I cut all the way up onto the neck and way below the breast area.

I have yet to cook a duck with proper amount will have about a half inch of fat in the bottom of it after cooking two mallards this way.

Cook, it is delicious in our food....
Gravy you make by taking the fat and putting it in a pan then cook that while adding flour to make it like a dough.
Low and slow are my rules when cooking roasts, or chickens for that matter.
