Do potatoes evolve into carrots if left in the cupboard too long? When potatoes start sprouting green bits in the cupboard, does this mean they are turning into carrots? If this is so then surely carrots are simply rotten potatoes hence the orange colouring...

That usually happens if you keep the potato until it is due to produce other potatoes - chuck them out or plant them in spring for a midsummer/early autumn crop! remind me... .
Yeah, just like sprouts evolve into peas, apples to limes and melons to oranges .

Our cupboard door I clicked, and then she moved one paw towards....
And then she moved one paw towards the cupboard, so I clicked, and then I think by the end of that 4 session, she started with closing it, and then I made the video.
