This might sound crazy but with QuickTime X and older QuickTimes that support timeline editing... .
It has 3 versions that allow you to choose how many features you want and it provides a wide range of cameras that it supports .
I'd recommend iStopMotion 2.

The best way in my opinion is use all of them if your data is really important, since each media has, with 2 different brands in each media in my....
Change in due course, like hard drives and optical discs have replaced my tape backups.

Normally all of our digital photos are stored on my computer and we back them up on a separate hard drive. I'm thinking now I'd like to find another back up or maybe two. Just to be absolutely sure.

My advice, read letters to many cooking blogs and restaurant websites that used their photos.

I scanning in my old paper photos from the 80s and 90s.
What DPI level should I be scanning them in? I've tried 150dpi (default) and 300dpi and don't see any difference (other than the size of the resulting image).

I'd say anything 600 dpi up is pretty good for photos, nothing lower as when.
I'm assuming the old photos extra 'noise' introduced.
"archival" quality.
That you'll never need to scan them again.
