A home owner can plumb a house with PEX in 2 days, and if you're good at it, you can do it in a day.
plumb a house in copper will take 5 guys, 5/8 days...that is A lot of billable time.

But if your well is producing high iron content water the anodes do convert the iron to sulfur dioxide and produce some pretty vile smelling... .
It does sound like a possibilty but you wouldnt normally think about having to replace anode rods on a new HWH .

Stay away from those rubber coupling.
Remove the threaded male in the black pipe then convert to your new material .

French systems do not normally have a storage tank in the loft. The hot water cylinder is under mains pressure with a diaphragm which may absorb the expansion as the water heats and a pressure relief valve which needs to drain via an air gap and U bend...

Air Admittance Valves (AAVs) like Studor eliminate the need for open pipe venting through the attic roof. It simplifies plumbing runs and cuts down on labor costs, in addition to roofing labor costs.

They are a supplement to the regular system
and limited to the one odd small pipe situation here and there
that can't practically be vented to the roof. .
They aren't an either /or option for the whole house .
