I can start by saying that most of the activities that you mention are best found in Cabarete and Samana Peninsula (whales Jan/Feb range) and Bayahibe .

There is NO SUCH COUNTRY as "DOMINICAN"..
The "Dominican" music is mostly GREGORIAN CHANT because the Dominican ORDER still uses Gregorian chant in their CHURCH SERVICES.
